The aperitif ritual on Friday evening is now well anchored in habits and, very often, on this occasion, I prepare a pizza with what I find in the fridge; the result is therefore always different, and generally very good! This evening, I offer you the latest creation, copiously garnished, which hesitates between pizza and flameküche. 

Small fresh onions, bacon and mozzarella on a fresh cream base, does that speak to you?

The cooking of the pizza being relatively short, the onions do not have time to cook through. They therefore remain slightly crunchy and full of flavor. For this, you really have to choose fresh and not dry onions, which allows you to also put their green stems in them, for a more delicate flavor. It is also preferable to take matchstick bacon, which is thinner and therefore faster to cook. 

As a base, no tomato but fresh cream, which I chose at 15% fat to reduce the caloric bill, but of course, nothing prevents you from taking full cream. 

Finally, note that I didn't salt the pizza because of the presence of bacon, but it's up to everyone!


  •  3 small fresh onions and their green stem 
  • 1 pizza dough
  •  2 tbsp. at s. heavy cream at 15% matte. greasy 
  • 100 g natural matchstick bacon 
  • 100 g of mozzarella in pods or grated 
  • 1 pinch of chilli


Preheat the oven to 210°. 

Chop the onions.

Unroll the pizza dough on a sheet of parchment paper. Place it on a perforated baking sheet.

Spread the fresh cream over the entire surface of the dough.

Sprinkle with chopped onions. then bacon bits.

Spread the mozzarella and sprinkle with chilli

Bake the pizza for about 15 minutes.
